Join us on a guided tour of FOOD BUILDING, a unique urban space in NE Minneapolis started by serial food entrepreneur Kieran Folliard, that houses three celebrated artisan food makers, along with a and restaurant, bar and market.
Learn how the story of FOOD BUILDING reaches back to Minneapolis’ heydays of brewing, and why that is relevant as each of the Makers—Red Table Meat Co., Baker’s Field Flour & Bread, and Alemar Cheese Company—all share a common thread with beer, the process of fermentation.
An active food production hub, each of the Maker’s spaces features multiple large observation windows to watch salumieres, millers and bakers, and cheesemakers at work. Learn the quintessentially Minnesotan story of Alemar Cheese (and why so many of their cheeses have hometown names), while learning about and observing their production processes in crafting soft-ripened and fresh cheeses. Learn why an accomplished baker set himself on the task of milling the best flour available, and see Mill City’s only operational commercial mill in Baker’s Field Flour & Bread’s space. Watch the bakers mix, shape dough at the bench, and feed loaves of bread into the wood-fired oven. See the salumieres at work butchering heritage hogs, and see the salumi curing rooms, whose temperature variations replicate caves.
Then visit Kieran’s Kitchen NE, one of few restaurants in the United States inside an active food production facility, where they bring all these purveyors’ products together on one plate, with great care about sourcing and seasonality. Tour admission includes your selection from a curated lunch menu.
