In 2021, what started as a passion project for husband and wife duo, Matthew and Elisa, in Big Lake, Minnesota, blossomed into Ember Coffee Company—a beacon of hospitality and commitment to quality.

Our simple invitation, "Taste and See," reflects not just the unique air roasting method we use—rare among less than 1% of coffee roasters—but also our approach to coffee: accessible, educational, and free from snobbery. This philosophy has driven Ember Coffee to win accolades such as Best Coffee and Best Coffeehouse in Minnesota by the Star Tribune in 2023, and recognition from coffee experts across Europe and the United States.

Ember Coffee Company stands out not only for its award-winning coffee but also for our ethical sourcing practices. We ensure that our beans are specialty grade, mold-free, fair trade, and often organic, sourced from farmers paid above a livable wage.

At Ember Coffee, we balance a commitment to consistency with a drive to innovate. Our staple offerings can be found at our Big Lake store and on our website, while our Roaster’s Choice features experimental batches from new regions and processing methods. This commitment to quality and exploration ensures a cup for everyone—from the coffee aficionado appreciating the nuanced flavors to the casual drinker seeking a pleasant daily brew.

Beyond coffee, we are deeply engaged in our community and committed to social change. A portion of our proceeds, especially from our Deliverance Blend, supports organizations fighting human trafficking. At Ember Coffee, we use "coffee for good" as a force to rescue and protect the marginalized and exploited, leveraging our superpower to bring beauty and positive impact to the world around us.
